Tasty Healthy Quinoa Recipes
Quinoa Salad
- Rinse 1 cup quinoa and add 2 cups of water in saucepan.
- Boil it until quinoa has absorbed all of the water (approx. 15 minutes).
- Remove it from heat and let the quinoa rest for 5 minutes to fluff it up.
- In a large bowl, combine 2 tomatoes, pine nuts, 1 chopped cucumber, 1 red bell pepper, 1 red onion, and a large bunch of parsley.
- In a small bowl, mix ¼ cup olive oil, ¼ cup lemon juice, 1 tbsp red wine vinegar, 2 minced garlic cloves, and ½ tsp salt. Whisk and toss with freshly ground black pepper.
- Whisk until blended and toss with freshly ground black pepper
- Serve chilled or at room temperature
Quinoa Pudding
- Rinse 1 cup quinoa with cold water and place it in mesh colander.
- Combine quinoa, 4 cups unsweetened coconut milk,1/3 maple syrup, 1 ½ tbs vanilla, 1 tbs cinnamon, and ¼ tbs salt.
- Place it on low simmer until pudding has thickened and the quinoa has absorbed most (but not all) of the milk.
- Pour into bowls and allow to cool for a few minutes.
- Sprinkle with additional cinnamon
Quinoa Chocolate Cake
- Mix the 3 tbs Fitness Mantra chia seeds with 9 tbs water and let it stand.
- Combine 1 cup plus 2 ¾ tbsp quinoa with 2 tbsp cocoa powder, 4 tbsp rice flour, ⅔ cup brown sugar, and ½ tsp baking soda.
- Wash the 1 orange and collect the zest. Add it to the mixture.
- Melt 3.5 ounces vegan chocolate and add it to the cake.
- Add the ¾ tbs applesauce and chia seeds.
- Grease a rectangular pan and pour the dough into it.
- Bake it for about 25 minutes.
- Cool completely before removing from the pan.
Quinoa Poha
- Rinse 1 cup quinoa with 2 cups water.
- Heat 2 tbsp oil in a non-stick pan. Add ½ tsp mustard seeds and 2-10 curry leaves.
- Sauté 2 chopped onions until golden brown. Add ¼ tsp turmeric powder, green chilies, and mix well.
- Add boiled, peeled and cut potatoes and mix well. Add the cooked quinoa, salt and mix well.
- Remove from heat and transfer to a serving bowl.
- Top with 2 tbsp crushed roasted peanuts, 1 tbsp chopped coriander, and 2 tbsp scraped coconut. Serve hot.
